Russello wheat is an ancient wheat grown mainly in the Ragusa area, it has an ear that tends towards red (from which the name derives) and is an ancient wheat in danger of extinction, recovered by Modican farmers for its aromaticity and its nutritional characteristics. Russello semolina is obtained by stone grinding. Wholemeal pasta from ancient Sicilian grains has a low gluten content, a low glycemic index and high digestibility.
