Mediterranean Red Tuna with olive oil

This species of tuna, more commonly known as "Tonno Alletteratus", is widespread in the Mediterranean Sea, especially on the Italian coasts. The elaboration of preserves is traditional, as in the old Sicilian Thoneries, the pieces are selected by hand, cooked in copper pots and packed manually.
